Declan and his family tucked away a Michelin Star in the 1970’s and another in the 80’s – he feels at home in Kilkenny now! These days he runs a large small bakery in Cork.

This is an actual question as opposed to the spambots. I watched the Arbutus vid, but what do you mean by “a large small bakery”?
Thanks Mel, your spammy friends now gone. Missed those. By that I mean a small scale #realbread bakery that has now scaled up to an industrial unit and 10+ employees. So they have scale without loosing the underlying ethos and processes.
