Declan Ryan – Arbutus Bakery
Declan and his family tucked away a Michelin Star in the 1970’s and another in the 80’s – he feels at home in Kilkenny now! These days he runs a large small bakery in Cork.

Joe Fitzmaurice, Cloughjordan Wood Fired Bakery
Joe comes from the family behind Blazing Salads in Dublin and these days can be found in an eco-village where he happily shares pictures of his wood fired oven across Twitter.

  5. Thanks Mel, your spammy friends now gone. Missed those. By that I mean a small scale #realbread bakery that has now scaled up to an industrial unit and 10+ employees. So they have scale without loosing the underlying ethos and processes.
